Hope’s Spice Infused Fried Chicken
There are 2 parts to this dish — includes chicken recipe and rice side dish.
Serves 4-5 people
1 whole chicken, cut into 6 pieces
2 large eggs
2 cups bread crumbs
2 cups all-purpose flour
1 tsp black pepper
Pinch of salt
3 white vidalia onions
1 of each – red, yellow & green bell peppers1 fresh tomato
2 fresh cloves of garlic
1/2 lb white rice
First, prepare the chicken. Take each individual part and cut several half-inch slits all around each piece.
Next, create your homemade spice for chicken. Take 2 vidalia onions, peppers, and your cloves of garlic and chop everything up very fine. Mix in the black pepper and a pinch of salt.
After you’ve created your spice, take the mix and insert it into the slits of the chicken. You can be as liberal as you want with the mix – the more spice, the more flavor!
Now, it’s time to coat the chicken in the egg wash and breading. In one container, whip up the eggs, and in another, mix the bread crumbs and flour. Drench each piece of spice-infused chicken in the egg wash and then coat it in your dry mixture of bread crumbs and flour.
You’re ready to fry. Heat up some olive oil in a pan and fry the chicken until it’s crispy golden brown.
To prepare the rice dish, dice up the remaining vidalia onion and the tomato. In a separate pan, heat up a little bit of olive oil and sauté the mix. Boil your white rice. When it’s finished, mix your rice in with the sautéed onions & tomatoes.
Serve the rice dish alongside the chicken for a delicious and hearty meal!
For a healthier, low fat side option, sauté fresh vegetables – broccoli, carrots, zucchini – instead of rice.
